The meal I have chosen to feature this month is homemade baked chicken nuggets with seasonal vegetables and sweet potato mash,
Just one of the delicious dishes we cook here at Kids Club that is loved by the children and is an easy way to educate them about healthy eating and that good food doesn’t have to be bad for you.
Why I like this meal?
I chose this meal as I find it a great way to make the children love meal time and with a few little tricks you can make the nuggets healthy., what I do is I use free range chicken crumbing the chicken in a wholemeal crumb or even a corn meal crumb for the gluten intolerant, then I brush with a little coconut oil before baking also using seasonal vegetables help teach the children that fresh vegetables bought in season can be delicious.

What the children like best about this meal?
The children love this meal because the crispy nuggets, spring beans and asparagus are fun handheld foods that are easy to eat and the sweet potato mash is smooth and naturally sweet.

Last tip: Don’t deep fry: just toast the crumbs in the oven to a light golden brown so when the chicken is crumbed then baked, they come out an even deeper golden brown all over AND it makes them extra crunchy!
