This recipe for Tuna Rice Balls makes a perfect healthy dinner recipe for kids that’s not only delicious but packed with nutritious ingredients.

Recipe for Tuna Rice Balls​

Ingredients

  • 2 cups short grain white rice
  • 2 ½ cups water
  • 2 tablespoons rice vinegar
  • 1 carrot, diced small 
  • Mixed corn and peas
  • 200g canned tuna in spring water, strained
  • ¼ cup mayonnaise
  • ½ teaspoon salt
  • 5 pieces of seaweed nori, finely chopped
  • 2 tablespoons sesame seeds, toasted

Method

  1. Rinse the Rice: Rinse rice thoroughly with tap water, gently washing it with your hands three times. Cook the rice in a rice cooker or pot (or use a combi oven if you prefer).
  2. Prepare the Vegetables: Blanch the carrot and zucchini in boiling water for 2 minutes, making them easier to cut into small pieces. Chop the seaweed nori and set everything aside.
  3. Mix the Rice: Transfer the cooked rice into a bowl immediately and add the rice vinegar. Mix well to combine.
  4. Combine Ingredients: Add tuna, mayonnaise, salt, diced carrot and zucchini, chopped seaweed nori, and sesame seeds (reserving a small amount of nori and sesame seeds for garnish). Mix everything well.
  5. Shape the Rice Balls: With clean, damp hands, roll the rice mixture into golf-sized balls.
  6. Garnish and Serve: Sprinkle the remaining seaweed nori and sesame seeds on top of each rice ball. Enjoy these healthy children’s meals as a fun and nutritious treat!
